Crescent Cookies

1 cup flour
5 eggs
2 tbs. olive oil
2 tns. sugar
4 tbs. butter
1/2 lb. grated Pecorino
1 lemon
butter

Mix the flour with 2 whole eggs, 2 yolks, oil, 2 tbs. sugar and 2 tbs. butter to make a dough. Let the dough rest for one hour in a cool place. Mix the cheese with the remaining egg and egg whites, the remaining sugar and the grated lemon rind. Roll out the dough to a thickness of about l/10-in. and cut out circles 3-in. in diameter.
Put a ball of filling in the center of each disk, wet the edges, and then fold over to seal them. Mold the cookies into crescent shapes and make a small cut in the middle of each one with a pair of scissors. Pre-heat the oven to 350ºF and bake on a buttered cookie sheet for 20 mins. Serve hot or warm.
