Ricotta Fritta
Fried Ricotta
2/3 lb. very dry ricotta
frying oil
2 eggs
breadcrumbs
salt
pepper
Beat the eggs, adding salt and pepper. Slice the Ricotta and dip it in the beaten eggs and the coat with breadcrumbs. Fry in hot oil, on both sides, until golden. Season with salt and pepper.
Can be served plain or with fresh tomato sauce.
